Alambique Serrano 3 Años 2nd Edition

Alambique Serrano 3 Años is an artisanal rum from Santa Maria Tlalixtac in the mountainous Cañada region of Oaxaca, Mexico. Produced by the Krassel family, it is made from 100% Java-variety sugarcane juice harvested from steep hillsides at elevations of approximately 2,300 to 3,900 feet.

The fresh cane juice is naturally fermented with ambient yeasts in stainless-steel and pine tanks. The second edition is an 11-cask blend, combining rum from the Krassel column still with rum distilled in a traditional copper alembic pot still. The rum is aged for a minimum of three years in a combination of ex-bourbon barrels and new French oak. The blend consists predominantly of Krassel Still rum aged in ex-bourbon barrels, complemented by copper alembic pot still rum aged in new French oak. It is bottled at 46.4% ABV, without added sugar or colouring.
On the nose, expressive aromas of aloe vera, watermelon, white flowers, stewed plantain, raspberry marzipan, cinnamon candy, and orange oil create an unusually vibrant and layered profile. On the palate, tropical fruit comes forward immediately, accompanied by lime zest, watermelon, and cucumber. These fresh flavours develop into warmer notes of cinnamon, nutmeg, and toasted almonds. The result is fruity, spicy, and remarkably distinctive.

The texture is rich and rounded, with the oak adding structure while allowing the unusual tropical fruit character to remain prominent. The finish is long and expressive, leaving lingering watermelon, spice, citrus, and toasted nut notes.

Alambique Serrano is an excellent choice for adventurous rum enthusiasts looking beyond conventional aged rum styles. Its combination of naturally fermented cane juice, dual distillation methods, varied oak maturation, and striking tropical character makes it a particularly distinctive expression from Oaxaca.
