Alambique Serrano Blend 11 “Besadiablos”

Alambique Serrano is an expressive artisanal cane spirit inspired by the highlands of Oaxaca. Produced by Los Hermanos Krassel, it follows the Matadiablo 2024 edition and showcases the distinctive character of Java cane grown at more than 3,000 feet above sea level in the Santa Maria Tlalixtac Mountains.

The cane is fermented naturally using ambient yeasts in stainless steel and pine tanks. Distillation combines a traditional still with a Krassel column, creating a spirit with both depth and aromatic precision. Besadiablos Blend 11 gains additional complexity through maturation in a diverse selection of barrels, including French oak, new Hungarian oak, old red wine, bourbon, and American oak rum barrels. A portion of unaged high-ester rum is then incorporated into the blend, adding further intensity and aromatic lift. Bottled at its natural strength of 59.6% ABV, Besadiablos delivers considerable power while maintaining remarkable balance.

On the nose, aromas of roasted nuts appear alongside grilled pineapple and dried berries. The profile is rich, layered, and immediately expressive. On the palate, roasted nuts and fruit leather take centre stage. Grilled pineapple brings concentrated tropical character, while dried pine needles contribute a distinctive resinous and herbal note. The high ester component adds intensity and complexity, while the varied oak maturation provides structure and depth. The finish is long, powerful, and aromatic, with lingering roasted fruit, nuts, oak, and herbal notes.

Alambique Serrano Besadiablos Blend is best appreciated neat, allowing its natural strength and complex maturation to fully develop. A few drops of water can help reveal additional layers of fruit and spice.
