It has been aged for 9 months in new medium toasted American oak barrels. What makes this mezcal so different is that the agave is cooked in industrial autoclave. This method does not impart the smoke that is normally found in mezcal. This results in a nose that consists of bourbon character, vanilla, caramel, guava and passion fruit. The taste reveals notes of oaky vanilla caramel, peaches, apricot, orange juice, salt, seawater, seaweed and green peppers.
